Abstract: The quality of the main chocolates marketed in Peru was determined. The physical aspect: color (C *, H *, IB), hardness and particle size, as well as physicochemical: water activity (aw), moisture, fat and ash, correlating with the declaration of ingredients presented in the packaging. We evaluated 30 experimental units of chocolates (imported, domestic, dark chocolate and milk) by experimental methods, randomly acquired from different establishments. The difference between color and hardness by origin was attributed to the dairy component. Dark chocolate had lower values of color components (8.75 ± 0.94 C *, 7.60 ± 4.71 H * and 28.46 ± 0.86 IB) than milk constituents (15.04 ± 2.78 C, 34.59 ± 7.46 H * and 34.55 ± 2.87 IB) and in hardness values... |

The goal of this study is to assess if the reproductive strategy of a brooding land snail shifts along a climatic gradient. We focused on the following traits: timing and length of the reproductive season, brood size, ontogenetic dynamics of embryos, and reproductive mode (viviparity versus egg-laying). We dissected the central European door snail Alinda biplicata, collected monthly from eight populations covering the oceaniccontinental climatic gradient within the species’ distribution range. This paper presents a method for the characterization of residual stresses in thick filament wound tubes. The three materials considered in the study are wet wound epoxy composite tubes based on E glass, R glass and T700 carbon fibres with three winding angles, [+/- 35], [+/- 55] and [+/- 851 with respect to the longitudinal axis. The aim of the present work is to measure internal stresses, based on strains liberated by cutting composite tubes, and to compare results with predictions from a residual stress model based on the classical equations of solid mechanics. This leads to a simple technique which allows the quick identification of the effects of manufacturing and moisture on the internal multi-axial stress level. |

Drying characteristics of noodles prepared from 50% taro and remaining equal proportions of rice and pigeonpea flours were investigated in a convective type dryer for a temperature range of 50°C to 80°C at a constant air velocity of 1.5 m s-1. Results indicated that drying took place in falling rate period. The sample dried at 50°C was found better in color as compared to samples at 60°C, 70°C and 80°C. The rehydration weight of noodles decreased with the increase in drying temperature. Moisture transfer from noodles was described by applying Fick’s diffusion model and the effective moisture diffusivity was calculated. We investigate palm species distribution, richness and abundance along the Mokoti, a seasonally-dry river of southeastern Amazon and compare it to the patterns observed at a large scale, comprising the entire Brazilian territory. A total of 694 palms belonging to 10 species were sampled at the Mokoti River basin. Although the species showed diverse distribution patterns, we found that local palm abundance, richness and tree basal area were significantly higher from the hills to the bottomlands of the study region, revealing a positive association of these measures with moisture. Abstract This study aimed at evaluating the levels of moisture, protein, water to protein ratio, and water absorption during chilling of chicken giblets (heart, liver, and gizzard) to set legal limits of water absorption during this process. The survey was conducted in the southern Brazil, the largest broiler-producing region of this country. Giblets (heart, liver, and gizzard) were collected fresh from the processing line after evisceration and at the exit of the chiller after the immersion process from two processing plants.
